Q. How dose mud cake go frozen dose it stand up like others and would you do it the
same as fruit cake wrap it well in cling wrap and foil and in a safe spot where
FH can't squash it?
A. Please see my previous response to Leanne. She also asked a similar question.
Wrapping a cake in glad warp and then foil is o.k (that's what I did with mine). It saves you some money by not having to go out and buy a special container for it.
Mud cake is fine in the freezer but it won't last as long as a fruit cake in the freezer. The normal shelf life of a fruit cake is longer than a mudcake and is replicated when frozen too.
I don't recommend freezing a mud cake any longer than 6 months. As a professional in the food industry, I'm sorry I can't recommend any longer than that. What you choose to do is another thing, but if your cake doesn't taste nice or isn't like it was on your wedding day (after a year of freezing a mud cake) you can't go back to your cake decorator and complain. That's the risk you take. When a bride comes to me and tells me she wants to keep the top tier for her first anniversary, that's why a fruit cake is always recommended. It's the only cake that will safely stay fresh and edible for a year.
I think freezing a mud cake for 6 months and cutting it on your 6 month anniversary is a nice idea and just another excuse to open a bottle of bubbly with it. You could always keep the flowers off your top tier and place them on a fresh cake on your first anniversary. That way you have a deliciously fresh cake to eat and still part of your wedding day on the cake. Just another idea which I hope helps.
