Wedding Cakes -Will fondant icing survice hot weather?

Q. I am getting married in April in Qld. We wont have access to a fridge at our reception, would fondant icing survive?

A. Hi Debbie,

Fondant icing will survive if your cake is kept away from direct heat and sunlight. ideally your cake should be kept in an airconditioned room away from direct sunlight but if your reception centre doesn't have airconditioning, get them to store your cake in the coolest room available until your guests arrive. Just before your guests arrive for say pre-dinner drinks, the staff can place the cake on the cake table and it'll be fine.

Fondant icing does a very good job of sealing the cake but if placed in direct sunlight or heat, the cake itself can sweat underneath the icing. Your cake decorator should know how to store your cake properly and when they deliver the cake they should also advise the staff on what to do.
